Haldi Mirchi ka Achar

Ingredients

250 gm fresh haldi
10-12 hari mirch
2-3 tsp salt(as per taste)
1/4 cup rai ki dal
1 tsp methi
1/2 tsp hing
2 tsp lemon juice
4 tsp oil+1/2 cup oil (groundnut or til oil)

Process

Peel, wash, dry and grate the haldi
Wash, dry, cut longitudinally and de-seed the mirch. now cut into small pieces
In a bowl spread salt, on  top of that spread rai ki dal
In a tsp of oil fry methi seeds till golden and grind it with hing in a mortar pestle
Add it to the masala
Heat 4 tsp oil in a pan. Add a pinch of rai and allow it to splutter
Pour it on the masala. Immediately mix the masala and allow it to cool
Mix haldi, mirchi and  masala
Fill it in an airtight bottle
Pour lemon juice
Heat 1/2 cup oil and allow it to cool
Pour it in the pickle on next day
Keep it in fridge
Enjoy the spicy and tangy pickle in meals
