Aloo Pulav

Ingredients

  • 1 cup basmati rice
  • 8-10 baby potatoes cut in half
  • 2 tablespoon oil
  • 1 tablespoon rai
  • 1/2 tablespoon hing
  • 1/2 teaspoon haldi
  • 1 teaspoon lal mirch
  • 2 teaspoon maharashtrian garam masala / dhania powder
  • Pinch of sugar
  • Finely chopped hara dhania for garnishing
  • Salt to taste

Process

  • Wash rice, remove water and keep aside for 30mins.
  • Heat oil and add rai and hing.
  • Add potatoes, haldi, mirch, maharashtrian garam masala or dhania powder, salt, sugar.
  • Fry for a minute.
  • Add 2.5 cups of warm water.
  • Keep on high flame till the rice is almost cooked.
  • Cover and keep on low flame.
  • Garnish with hara dhania.
  • Serve aloo pulav, top with a tablespoon of desi ghee. Goes well with curd / chaas and koshimbir.
