Ingredients
- 1 cup basmati rice
- 8-10 baby potatoes cut in half
- 2 tablespoon oil
- 1 tablespoon rai
- 1/2 tablespoon hing
- 1/2 teaspoon haldi
- 1 teaspoon lal mirch
- 2 teaspoon maharashtrian garam masala / dhania powder
- Pinch of sugar
- Finely chopped hara dhania for garnishing
- Salt to taste
Process
- Wash rice, remove water and keep aside for 30mins.
- Heat oil and add rai and hing.
- Add potatoes, haldi, mirch, maharashtrian garam masala or dhania powder, salt, sugar.
- Fry for a minute.
- Add 2.5 cups of warm water.
- Keep on high flame till the rice is almost cooked.
- Cover and keep on low flame.
- Garnish with hara dhania.
- Serve aloo pulav, top with a tablespoon of desi ghee. Goes well with curd / chaas and koshimbir.
